Corn Fritters with Sriracha Dip

Sweet corn is in season! If you ask me, there’s nothing better than corn on the cob and sliced tomatoes for an entire dinner. Since Rudy and Nick both have braces right now, they may not agree because they have to cut their corn off the cobb to eat it. To make sure they get to enjoy sweet corn this season, I made fritters, a traditional Southern side dish that is both sweet and savory. This “braces-friendly” recipe is paired with a nice sriracha dip to add just the right amount of heat. The boys loved them. You will, too! 



  • – You must deep fry them. Using a shallower pan, as you can see in the pictures, leads to huge pops of grease, which hurt. 
  • – They fry quickly; be attentive.
  • – Use a teaspoonful of batter, no more, for each fritter, to ensure doneness.
