A lack of fresh produce can be a big downer during the winter months. In our family, we especially miss fresh corn on the cob. There is no substitute, but this recipe for creamed corn reminds me of hours spent cutting corn off the cob and prepping it for the freezer using a little cream and salt. You can get similar results by visiting the freezer section at the grocery store and looking for organic frozen corn to use in the following recipe. Want a true taste of summer? I suggest serving this with fried chicken, mashed potatoes with gravy, and green beans.
